This Isn't Cheese. It's Jaggery.


What's jaggery you ask? East Indian cane sugar. At The Hen we use it in almost anything. It's of course sweet—being that it's sugar—but it has a rich, earthy taste that really enhances flavors of all kinds of sweet and savory foods. Notably, jaggery is an Ayurvedic remedy. We have to get out of this idea that all sugar is bad for you. It's not. From an ayurvedic perspective: jaggery is cooling and strengthening for all body types, while regular white sugar is aggravating to all body types. We like to buy a block of it and slice it off, chop it, or grind it up into powder. We get it at India Market on Fairview, Boise.
